Greek Meatballs

Anytime of year is good for meatballs, but especially around this festive time of year they are a great choice for your entertaining needs. Want to add a little different flavor for your holiday appetizer? Try Greek meatballs. Serve with a yogurt sauce, like this one from AllRecipes.com. It would a bright start or accompaniment to the main meal for your guests.

Greek Meatballs for a Crowd (makes 55-60 meatballs)

Ingredients

About 5 pounds of ground beef and pork (I usually do about 2/3 beef and 1/3 pork)

1 pound of bacon, minced in the food processor

1/2 of a large sweet onion, grated

1 egg, beaten

2 cloves of garlic, minced

1 teaspoon of salt

1/2 teaspoon of pepper

1 Tablespoon of oregano

1/2 teaspoon dried mint

10 ounces of frozen spinach, thawed and drained

8 ounces of feta, crumbled

Directions

Place ground meat and bacon into a large bowl. In a small bowl mix onion, egg, garlic and spices. Pour mixture into the meat. Add the spinach and feta. Dig in and mix it all together. Make a small pattie and cook it through. Taste for seasoning then adjust and repeat if needed.

Preheat oven to 400 degrees. Roll meatballs and brown them in a heavy bottomed pan with olive oil. Transfer to cooling rack on top of baking sheet. Bake for 15 to 20 minutes. Serve warm.

I know it seems like a lot of meat, but meatballs freeze really well and take some work. If I’m going to do that hard work, might as well make double so you get a couple of meals or appetizers out of it 🙂 If you try to halve the recipe, let me know how it comes out.

Taco Meatballs

Another Thursday in December means another meatball recipe for you to use as an appetizer on game day or part of a holiday buffet or to bring to a potluck! Meatballs are very popular and everyone has their favorite recipe. Here is a little twist that pairs Tex Mex flavors with meatballs.

Taco Meatballs

Ingredients

About 3 lbs ground chicken and pork (I use 2/3 pork and 1/3 chicken, you can use either all pork or all chicken or even turkey)

3 pieces of bacon, chopped finely or pureed in food processor

1 garlic clove, minced

½ Tablespoon minced jalapeño (or more if you want them to be spicy)

1 teaspoon salt

¼ teaspoon fresh ground pepper

1 teaspoon onion powder

1 Tablespoon chili powder

½ teaspoon cumin

1 egg

1/4 cup of bread crumbs (use gluten-free breadcrumbs if making this gluten free)

6 to 8 oz of cheddar cheese, cut into ½ inch cubes

2-3 Tablespoons of vegetable oil

Directions

Pre-heat oven to 375 degrees. In a small bowl mix garlic, jalapeño, salt, pepper, onion powder, chili powder, cumin, egg and bread crumbs. Place meat and bacon (or oil) in a large bowl and add the egg mixture. Get your hands dirty and mix it all together. Cook a small patty of the meat mixture to taste and adjust seasonings if you need before stuffing and cooking the whole batch. Roll meatballs. Take a cube of cheddar and stuff it into the center of the meatball, making sure it is completely encapsulated by the meat mixture. Heat a large not stick-pan to medium-high, add olive oil. Brown meatballs and transfer to a baking rack that sits on top of a cookie sheet. Roast for 20 minutes. Serve or freeze.

Serve with taco shells, salsa and avocado or make a wrap with tortillas or serve as an appetizer dipped into guacamole or salsa. These go very well with my Tomatillo Salsa or Red Salsa.

Rainbow Pizza

Whenever I host Christmas Eve, we try to keep it simple. The big meal is the next day, so the night before we have a dinner of appetizers. It can be casual and low key or elegant hor d’ouvres. A mixture of hot and cold appetizers are more than filling for a small or large group of people.

Pizza is something that can be a dinner in itself or an appetizer for a crowd. It is something most kids will eat and it is comforting.

We have pizza every Friday night. Over the summer my kids started picking different toppings each week. One night, one of my sons suggested carrot pizza. He loves carrots. I was very, very skeptical but I had told him he could pick, so we got some rainbow carrots from Trader Joe’s and this recipe is what came out of it. AMAZING! Even my husband, who does not like cooked carrots, loved this pizza. Try something new, live a little 😉

Rainbow Carrot Pizza

Ingredients

  • 3 carrots different colors, sliced thinly (I used a mandolin)
  • ¼ cup white balsamic vinegar
  • 1 Tablespoon agave
  • 1 teaspoon salt
  • 1/8 teaspoon black pepper
  • 3 small garlic cloves minced
  • 2 Tablespoons chopped fresh basil
  • 1 pizza crust One of my favorites is the Against the Grain crust found in the GF freezer section
  • ¼ cup olive oil
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • ½ cup of tomato sauce more or less depending on your preference for sauce
  • 8 ounces of shredded mozzarella

Instructions

  1. Bring a pot of water to a boil. Fill a large bowl with ice water. In a medium bowl mix vinegar, agave, salt, pepper, garlic and basil. 

  2. Drop carrots into boiling water for 2-3 minutes and remove, placing immediately into ice water. Drain carrots and put them into the marinade for about 20 minutes.

  3. Preheat oven to 425 degrees. Take pizza crust out of freezer. 

  4. In a small bowl mix the olive oil, salt and pepper. Brush olive oil mixture on the crust and place crust on the rack or a heated pizza stone and cook for 7 minutes.

  5. Take the crust out of the oven and spread tomato sauce over it. Cover with the mozzarella. Take carrots out of the marinade and dry in a towel. 

  6. Place carrots however you like around the pizza. Cook for another 20 minutes. Take out and serve. Top with some more fresh basil if you like.

Recipe Notes

To save time, you can skip the instructions to boil the carrots and put them in ice water. Instead put them directly into the marinade after you slice them.

You can prepare everything ahead up to the last 20 minutes of cook time. Keep it in the fridge and cook just as your guests arrive for a warm appetizer.

Taking something simple and familiar, like pizza, and putting a new ingredient with it, is a good way to expose your family to new tastes. You never know when they’ll surprise you. Pizza is something you can easily adjust to your family’s tastes, so if the rainbow carrots don’t go over well, try different colored peppers or place the pepperoni in a shape of a Christmas tree.

Meatballs, Plain and Simple

These meatballs are a blank canvas. Flavorful on their own but can easily be served with marinara or to make swedish meatballs or even the popular bbq sauce and grape jelly meatball appetizer. They are perfect to bring to a potluck, to bring to family or friends as an act of kindness or just to enjoy at home.

Meatballs  (bulk recipe – you can 1/2 this recipe)

Ingredients

about 3 pounds of pork (boneless sirloin) (or 3 lbs of ground pork)

about 3 pounds of beef (bottom round) (or 3 pounds of ground beef)

8 slices of bacon

2 eggs

1/4 cup gluten-free bread crumbs

1/2 cup of milk

2 cloves of garlic, minced

1 1/2 teaspoons salt

1/2 teaspoon pepper

1 teaspoon oregano

1 Tablespoon shredded Parmesan

Directions

Preheat oven to 375 degrees. Mix all the ingredients together. Grind the meat and bacon together if you are not using store bought ground meat. If you are using store bought ground meat, finely chop the bacon or put it in your food processor. Form each meatball and place onto cooling rack placed over baking sheet. Bake for about 25 minutes. Serve with your favorite sauce or freeze in batches to use another time.

You can brown these first for a deeper flavor, but they are just as delicious just baking them. Keep them warm in your crockpot with your favorite marinara. This works well for entertaining. You can cook some gluten-free pasta and toast up some gluten-free garlic bread or make zoodles (zucchini noodles) for a pretty (and healthy!) red and green Christmas themed spaghetti and meatballs.

My kids love to take the leftover meatballs for lunch! Add some yogurt and carrots with hummus and we have a school lunch or a meal my child with celiac disease can bring with him if we are visiting family or friends.

Italian Stuffed Meatballs

A week later and its time to forget about turkey for a little while and switch up your menu! Try these Italian stuffed meatballs and leave your family and friends asking for seconds and thirds! Thanks to my family and friends who tested this for me 🙂

These meatballs would be great for a weekend dinner or even holiday appetizers meal! If you in the mood for Asian flavors, try these Bahn Mi Meatballs.

Italian Stuffed Meatballs

Ingredients

About 3.5 lbs ground beef, chicken or pork (I like to use 2/3 pork and 1/3 chicken thighs or 2/3 beef and 1/3 pork for the best flavor)

3 pieces of bacon, chopped finely (or pulsed in the food processor)

1 1/2 teaspoon salt

¼ teaspoon fresh ground pepper

½ teaspoon onion powder

2 teaspoons oregano

1 teaspoon garlic paste (or 1 clove of garlic, minced)

2 Tablespoons fresh basil, chopped finely

1 egg

1/4 cup of bread crumbs (use gluten-free breadcrumbs if making this gluten free)

6 to 8 oz of mozzarella, cut into ½ inch cubes

2-3 Tablespoons of olive oil

Directions

Pre-heat oven to 375 degrees. In a small bowl mix salt, pepper, onion powder, oregano, garlic, basil, egg and bread crumbs. Place meat and bacon in a large bowl and add the egg mixture. Get your hands dirty and mix it all together.

Roll meatballs. Take a cube of mozzarella and stuff it into the center of the meatball, making sure it is completely encapsulated by the meat mixture.

Heat a large not stick-pan to medium-high, add olive oil. Brown meatballs and transfer to a baking rack that sits on top of a cookie sheet. Bake for about 15 minutes. You can skip the browning step if you like and just add about 5-10 minutes of baking time.

Serve with your favorite tomato sauce and spaghetti, make meatballs subs, serve as an appetizer or freeze for another night when you need an easy meal.

Now, let’s talk ground meat. I grind my own meat using this attachment for my Kitchen Aid mixer. I love it. The meat tastes so much better when freshly ground. You can ask a butcher to do this for you, just make sure if you are keeping gluten free that they are taking necessary precautions to not cross contaminate the meat with marinated meat or spices that contain gluten.

Butter, Sage, Rosemary and Thyme: How to make a compound butter

Yes, I am spending an entire post writing about butter. Butter is an essential part of Thanksgiving. You rub it all over the turkey, spread it on warm rolls just out of the oven, put butter in the stuffing, melt it on top of roasted squash, cream together in the mashed potatoes and use it to finish off the gravy. I could keep going! I hope Julia Child would be proud.

Because butter is such a big part of the meal, I like to make it more flavorful. It is very easy to do. Make a compound butter. That is a fancy name for a butter that you add flavor to. I usually make it a day or two before Thanksgiving. You can even make it today!

Rosemary, Sage, Thyme and Lemon Compound Butter

Ingredients

1 ½ cups of unsalted butter (3 sticks), softened/room temperature

1 Tablespoon finely chopped fresh rosemary

¼ teaspoon finely chopped fresh sage

1 tsp finely chopped fresh thyme

zest of one lemon

1 teaspoon of salt

A pinch of pepper

Directions

With a fork, mash together all of the ingredients in a small mixing bowl. Take 3-4 tablespoons of the butter and place on a small rectangle of parchment paper and make it into a roll. Place in fridge to cool, until Thanksgiving morning. Take it out, unroll it onto a plate and it will be ready for your table! This can be for your table for your guests to melt on warm rolls. The remainder of the butter should be covered and placed into the refrigerator until Wednesday night. Leave it on the counter so that it is spreadable on Thursday when you start to cook.

If your stuffing mix or stuffing already has seasoning, use plain butter. Otherwise you can use this on any other part of the main meal.

Appetizer Ideas for Thanksgiving

I spend so much of my energy on the main meal, by the time I get to the appetizers I try to keep it as simple and hands off as possible. It’s also a great thing to offer for someone else to bring if they ask and you know they’ll be on time 🙂

I know, I know, if you have someone in your family with celiac disease or an allergy, the thought of allowing others to bring food into your house can be daunting. I usually only ask people who offer to bring something and who know to bring something safe that is packaged or bring the ingredients and make it at my house (like a fruit plate or veggie platter).

My children could fill up on appetizers alone and usually do, so I have to make sure I put more than enough out and wait until guests arrive before taking the cover off. Some years it is as simple as 2-3 different blocks of cheese with some crackers (I LOVE Van’s GF Everything Crackers!), a package of prosciutto from Trader Joe’s and some baby carrots with hummus. Other years I have put in a little more effort and made a cheese ball shaped like a turkey or even spinach and artichoke dip to keep warm in a mini Little Dipper CrockPot.

NOTE: I do not get money from any of these companies I’ve linked to in this post. I only recommend items my family uses. I will let you know in the post if I ever do get money or an advantage, but the recommendation will always be for something I use and love!

My plan for Thursday, which may change depending on how much time I have, is:

A  Pumpkin Cheese Ball (I will make the day before) based on this recipe I found from my.recipes.  They serve it with apples, but I think I’ll add some crackers to the dish too.

Hummus with vegetables I use store bought hummus. Our family favorite gluten-free options are Tribe or Wegman’s store brand. Just drop it on a plate with the vegetables! Easy.

Tortilla chips and homemade salsa (if I have time or can get my daughter to make the salsa!) Our family favorite gluten-free tortilla chips are Xochitl or Tostitos Natural. Here is a link to my newest salsa recipe! .

Shrimp cocktail (if I have time) I have Wegman’s already cooked frozen shrimp in the freezer, which I buy whenever it’s on sale, so I have it on hand for either an easy meal or easy appetizer. I do like to make my own cocktail sauce. It is simple, quick and tastes amazing! I use Ina Garten’s cocktail sauce recipe except I don’t usually have chili sauce on hand, so I make it entirely with ketchup and it is still AMAZING!

That is what we like to eat in our house. These are all items where you definitely do not miss the gluten because they are almost all naturally gluten free. What do you like to serve for appetizers?

Good Food that happens to be Gluten Free

I am a GF Cook. I make Good Food that happens to also be Gluten Free. For my family and others with celiac disease it is out of necessity. For many others it is a way to eat healthier or just feel better. In the past 2 years since my son’s diagnosis of celiac disease, there have been ups and downs. I have discovered that you do not have to sacrifice taste, texture or being adventurous with new foods. You do not have to throw out your family recipes and favorite cookbooks. Yes there are limitations, but after the first several months, we found our groove and now know the resources that can help navigate the world of gluten-free eating.

Cooking gluten-free food often means making it from scratch because convenience food (like prepared frozen meatballs from Trader Joe’s that used to make a weekly appearance at our house!) often contain gluten. More and more gluten-free items are appearing in the market, which is great, but as I love to cook and now have a giant freezer in my garage, I make my own convenience food packs and freeze them.


I spent a great day testing meatball recipes last spring and had some family and friends test recipes. I made Italian meatballs stuffed with mozzarella, homemade sausage meatballs and the winner – Bahn Mi flavored meatballs. I made about 4 pounds worth and saved them in 2 pound batches, perfect for our family of five for dinner with leftovers for lunch. You can cut this recipe in half. I serve them with cucumber noodles (or coodles) for a spin on spaghetti and meatballs. You can use them in a lettuce wrap or as an appetizer with your favorite Asian dipping sauce. My kids love hoisin sauce and I love peanut sauce. I grind my own meat using the Kitchen Aid attachment but you can buy ground meat in the grocery store or ask the butcher to grind it for you, but know that that contains more fat, so you won’t need to add as much bacon in the recipe below. 

Bahn Mi Meatballs
Makes about 35 meatballs 


Ingredients
2/3 cup cucumber shredded (about 1 English cucumber)
1/3 cup shredded carrot
3/4 cup rice vinegar
3/4 cup water
2 Tablespoons sugar
About 4 1/3 lbs ground chicken and pork (I use 2/3 pork loin and 1/3 chicken thighs. It was also tested with only pork)
3 pieces of bacon, minced (you might have to test how much bacon you add depending on the fat content of your ground meat)
1 1/2 teaspoon salt
1/8 teaspoon fresh ground pepper
1 Tablespoon ginger, paste or grated fresh
handful of Cilantro, finely chopped
1/2 tsp coriander
1 egg (still add one whole egg if cutting recipe in half)
1/4 cup of bread crumbs (use gluten-free if making this gluten free)
2-3 Tablespoons of canola oil
1/2 teaspoon sesame oil


Mix the rice vinegar, water and sugar in a small bowl. Add cucumber and carrots. Soak at least 3 hours, up to overnight. Drain and dry between some paper towels while you prepare the meat mixture. Pre-heat oven at 375 degrees. In a small bowl mix salt, pepper, ginger, cilantro, coriander, egg and bread crumbs. Place meat in a large bowl and add drained cucumber and carrots and the egg mixture. Get your hands dirty and mix it all together. 


TIP: Cook a small patty of the meat mixture to taste and adjust seasonings if you need before cooking the whole batch.


Heat a large not stick-pan to medium-high, add canola oil and sesame oil. Brown meatballs and transfer to a baking rack that sits on top of a cookie sheet.



Roast for 15 minutes. (You can put directly on rack without browning and cook for about 25 minutes, if you don’t have time to brown). Serve or freeze.

Fall, Football, and Tailgating

Those who know me, know that I am not a big football fan but I have been known to host Super Bowl parties just to make the food 🙂 Fall is the season where many spend their weekends tailgating outdoors or in front of the TV cheering on their favorite teams. I was recently asked for ideas for recipes for “football food.” Here are some finger foods, slow cooker foods and grill recipes for your fun fall weekend with or without football!

Finger Foods and Dips
Cheeseburger Egg Rolls (top left of photo below)

These egg rolls were delicious! They are from Rachel Ray. Easy to make but a little time intensive to roll each one up. I served it with ketchup, mustard and bbq sauce for dipping rather than spending the time to make the sauce. The kids went nuts over these!

Corn Dog Muffins (top right of photo above)
These are from a blog called Iowa Girl Eats. I saw them on Pinterest and ran with her idea. I made them in regular muffin tins and made the Jiffy box of corn bread 🙂 and added about 1 cup of shredded zucchini and 1 cup of shredded cheddar and about 1/4 tsp of chili powder (add more if you want more chili flavor or a little cayenne if you want a kick), salt and pepper. Pour the batter into lined or greased muffin tins. I found for the regular sized muffins I cut the hot dogs into thirds and put one piece in each muffin and bake until ready. I found that these took a little longer than usual until the dough around the hot dog in the center was fully cooked.

Slow Cooker foods

Chili
I can’t wait to have my house smell like chili while it cooks away all day! I’m planning to make some on Monday. Its a full meal if you add those corn dog muffins above. Make it vegetarian by making black bean chili and zucchini corn muffins. I like to make my chili in the crock pot these days, which becomes a great vessel for keeping it warm while serving or bringing to a potluck or tailgate party. Throw a can or two of your favorite beans into the crock pot with a can of diced tomatoes, dice a couple of carrots and or zucchini or use whatever leftover vegetables you have on hand (corn, squash, eggplant, parsnips – so many veggies can work), an onion, garlic clove, palmful of chili powder, salt and pepper to taste.Cook on low for 4-6 hours. If you want to add meat, cook it first before putting it in the slow cooker, unless you are using stew meet, then you could throw it in and cook it all day. I have found that ground beef or turkey is mushy if you cook it in the slow cooker with the other chili ingredients.

Short ribs

I can cross short ribs off of my Cooking Bucket List now! So if you are making a meal for friends over the weekend or for Monday night football, these are sooo good! I used the ingredients for my favorite meat marinade as the cooking the liquid, equal parts balsamic vinegar, Worcestershire sauce and soy sauce with garlic and shallots.  

I made a quick dry rub for the short ribs with salt, pepper and thyme and then browned them in the pan. before putting them in the slow cooker for about 8 hours (I had about 2.5 – 3 lbs of meat).

Then I took them out when there were practically falling off the bone and poured the liquid into a sauce pan and reduced it by about half. Add a little flour, 1/2 tsp of brown sugar and a little pepper and whisk together. Add more flour if you want it thicker.  Use as gravy or dipping sauce. Serve with mashed potatoes or risotto or polenta.

Pizza – Great for an appetizer or a meal!

Your favorite Steak, pork, ribs, BBQ Chicken or sausages always are a crowd pleaser. I recently made some chicken on the indoor grill. I made a dry rub with brown sugar, salt, pepper and African Smoke spice blend from Trader Joe’s. If you don’t have that spice blend, go buy it immediately! or just use smoked paprika or chili powder. It was delicious! I served it with a beet barley risotto and some steamed carrots, not exactly tailgating food, so I’ll give my recipe for that later 🙂

More Summer Fun…Eating on the road or after just returning from a vacation

Summer is still in full swing. Long days of fun in the sun don’t give you much energy for dinner. Keep it simple. Have a picnic in your backyard or take one to a local outdoor concert. Kids love to think that they are just snacking and not eating dinner, so make the picnic out of a bunch of snacks. 
I love to bring carrots, celery, whole wheat crackers, hummus, cheese sticks, prosciutto, salami, cooked hotdogs or sausage (already cut up – use leftovers!), cut up watermelon or cantaloupe or any fresh berries, peaches, plums, or any fruit that are in season or that you know your kids will eat. Using the celery, if you have the time or energy, you can even make ants on a log 🙂 Peanut butter and raisins are a hit with many kids. You could also make ham and cream cheese roll ups. spread a little cream cheese on a piece of ham, roll up and serve. Two out of my three kids love that one! Bring some nutella to spread on the crackers as a special treat.
If you can pack a picnic for a night, pack it for a road trip. Heading up to Vermont for the weekend? Bring a picnic to eat in the car or picnic area for lunch or dinner. 

 When returning from a vacation, the last thing you want to do is cook or eat takeout. Keep some frozen meals on hand or stock up on Trader Joe’s frozen appetizers before you leave, so you can make an easy dinner when you get home.

Enjoy the outdoors as long as we can! This past week in Boston was crazy hot, so I’m sure many of us all fled to the AC, but now it is 70s and sunny! Perfect! Like most of a Seattle summer 🙂
I am half way through my cooking bucket list. I conquered (somewhat) oysters last week. I personally only got one open. My husband got another one open. Then I decided to roast the other four I bought to get them to open. Two out of the four did. My parents, who do not like raw seafood, enjoyed the roasted oysters that did open. My husband and I both loved the raw ones. I made a quick version of a mignonette sauce with red wine vinegar and garlic. I would try it again, but only after inspecting the oysters when I buy them, for ones that I think I can open 🙂
