Make it Hawaiian

Adding pineapple to a dish can transform it to a tropical delight! My family’s love of “Hawaiian” food has grown over the years. We started with Hawaiian pizza (ham and pineapple). Then came the Hawaiian hot dogs. This is now a barbecue must have! Slice a hot dog down the middle and stuff with crushed pineapple. Wrap each hot dog with bacon and grill until bacon is cooked. Easy and delicious!

I recently rediscovered kielbasa. It is a great protein that makes a quick, easy and cheap meal! Of course, I had to make it Hawaiian 🙂

Hawaiian Kielbasa with Rice

Ingredients

1 ½ cups of rice

3 cups of broth or water

1 teaspoon onion powder

½ teaspoon of salt

¼ teaspoon of pepper

¼ teaspoon garlic powder

1 teaspoon vegetable oil

5 pieces of bacon, chopped

½ of a sweet onion, diced

2 cloves of garlic, minced

1 ½ bell peppers

1 kielbasa, diced

8 ounces of crushed pineapple

3 Tablespoons soy sauce

1 Tablespoon brown sugar

Directions

Cook the rice with the broth/water, onion powder, salt and pepper and garlic powder in your rice cooker or on the stove top. Add the oil and bacon to the pan. Stir and cook for a couple of minutes. Add onion, garlic and bell peppers. Stir and cook for a couple of minutes. Add the kielbasa and heat through. Add the pineapple, soy sauce and brown sugar, cover and cook for 5 more minutes and it will be ready to serve.

This is a perfect quick weeknight meal or even for entertaining. It would be a great meal for a certain football game on Sunday night 🙂 I’m planning on making  wings and pulled pork on gluten-free pretzel rolls (from one of my favorite sources, Gluten Free on a Shoestring) along with some carrots and hummus and maybe guacamole. Easy Slow Cooker Barbecue Ribs

If I want to have a quiet dinner in my house, I serve ribs. My kids love them. Especially one of my boys. He loves to talk, but put some ribs in front of him and he will be completely silent and just eat and eat and eat and eat 🙂

Ribs are best when cooked low and slow and they practically fall off of the bone. This recipe will make your house smell amazing and wow your family at dinner or friends at your next tailgate or game day gathering!

Slow Cooker Barbecue Ribs

Ingredients

15 ounce can of tomato sauce

1 clove of garlic (minced)

1 teaspoon of onion powder

1 Tablespoon chili powder

½ teaspoon salt

¼ teaspoon pepper

6 Tablespoon of brown sugar

3 Tablespoons of honey mustard

3 Tablespoons of soy sauce

5 Tablespoons of cider vinegar

3 teaspoons of Worcestershire sauce

1 rack of ribs (2 to 3 pounds), brined

5 sprigs of thyme

3 small onions, sliced

Directions

Mix all ingredients together, except for ribs, thyme and onions.

Turn your slow cooker on high and add the ribs. Pour half of the sauce on the ribs, reserve the rest of later. Add thyme and onions to slowcooker as well and mix with the ribs and sauce.

Cover and cook on high for 1 hour and 30, minutes and on low for another 2-3 hours.  Take ribs out, put on platter and top with the remaining sauce.

You don’t have to brine the ribs, but do it once and you will know why I brine all my pork and poultry. I have even tried it with beef, using pickling spices and it had a mild corned beef flavor. Delicious!

Serve with the apricot wings I posted earlier in the week and some easy appetizers if making for a party. For dinner, I often serve it with polenta and green beans.

Poached Salmon

The first week of the new year is coming to an end. Posting everyday in December was a great challenge and I’m glad I did it and maybe I’ll revive it every once in awhile (shhh, don’t tell my husband), but I am back to posting 2 times a week.  You’ll see posts about what to make for dinner, lunch and even breakfast. Comfort food with a twist and of course, always gluten-free because in our house it has to be. To get everyone in my family to eat it, it has to be good. These are recipes that are tested by me, my husband, our 9 year old daughter and twin 6 year old boys.

We had family visiting from other parts of the country (south and the midwest) over the holidays so I made a fair amount of seafood. I made my best clam chowder to date, baked cod, poached salmon and roasted shrimp. Poaching fish is now my new favorite way to cook it! Since it was the holidays I went all out with the butter poaching liquid, but will soon test a recipe with broth so it is healthier and we can eat it more often.

Butter Poached Salmon

Ingredients

About 2 pounds of fresh salmon

4 sticks of butter

1/4 cup of olive oil

zest of one lemon

juice of one lemon

1 teaspoon of salt

1/4 teaspoon of pepper

4-5 sprigs of thyme

4-5 basil leaves, torn

Directions

On medium heat, melt the butter and all the ingredients together in a large sauce pan or pot. Do not boil, but allow to simmer. Place the salmon into the butter and cover. If salmon is not fully covered by liquid, spoon it over the top. Cook until desired doneness, about 10 to 15 minutes.  Serve.

We enjoyed it with roasted shrimp and tomatoes, polenta and salad.

Ice Cream!

There is not much better than an ice cream sundae! Ice cream is also one of the easiest desserts for a crowd. You can make an ice cream sundae bar as fancy or as basic as you want. Make your own fudge sauce or use the bottle of Hershey syrup that you already have in the fridge. Cut up some bananas or just put out a jar of maraschino cherries. Make your own whipped cream or buy a can of it.

Whipped cream is something I love to make. Don’t get me wrong, we buy the Redi-Whip cans sometimes (they are gluten-free!) and have been known to spray it into an open mouth 😉 but I LOVE fresh whipped cream. It is very easy to do.

Fresh Whipped Cream

Ingredients

1 pint of whipping cream

2 Tablespoons of confectioners sugar

1 teaspoon of vanilla

Directions

Place metal mixing bowl in fridge the morning you want to make whipped cream. Take out when you are ready to mix. Pour entire pint of whipping cream into bowl. Start whipping. When it is frothy, add confectioners sugar and vanilla. Whip until stiff peaks form.

Put the bowl out with your other sundae toppings, fudge, sprinkles, cherries and an assortment of ice cream flavors. For our holiday dessert we had Hood Peppermint Stick, Vanilla and Fenway Fudge (all gluten free).

Whether you are running around returning things, doing more shopping or relaxing around the house, this is a fun way to do dessert! Especially would be fun for a kids party. A dessert both kids and kids at heart will love!

 

Polenta, an easy holiday side dish

Instead of serving mashed potatoes at your holiday meal, why not try polenta? They are a creamy and delicious accompaniment to ham, turkey, roast beef or roast vegetables.  The two different ways I make it, are much easier and less hands on than mashed potatoes. I make them in the slow cooker, using this recipe from About.com and it comes out perfect, every single time. It takes about 2-3 hours in the slow cooker, but is basically completely hands off.

Most often I make polenta by taking a huge shortcut, buying the already made tubes at Trader Joe’s. Here is my recipe to transform those tubes into an amazingly smooth and cheesy polenta.

Quick Polenta

Ingredients

2-18 ounce tubes of Trader Joe’s Polenta

3 Tablespoons of butter

1 cup of milk (I use either 2% or whole)

1/4 cup of mascarpone or cream cheese

3 sprigs of fresh thyme, chopped – optional

Directions

Take the polenta out of the tube and dice. In a medium saucepan over medium heat, add butter and the diced polenta. Cover for about 2 minutes, then stir. Cook covered for another 3-6 minutes until the polenta is soft. Use a potato masher and mash the polenta. Add milk, mascarpone and herbs if using them.  Mash everything together and stir until smooth. You can then keep it warm in your crock pot or if you have a warming burner, you can put it there covered and serve within an hour or so.

You can use this polenta as part of an easy meal this week. I like to serve it with sausage and peppers.

Apple and Onion Pot Roast

Today I am sharing one of my favorite slow cooker recipes. I have been making this for over 10 years!

I have made it with both beef and pork roasts. Both great! It is based on a recipe from Fix-It and Forget it, Recipes for Entertaining by Phyllis Pellman Good and Dawn J. Ranck. Not much to change when making it gluten free other than just ensuring the soy sauce, Worcestershire sauce and spices are safe.

Apple and Onion Pot Roast

Ingredients

2 Tablespoons of olive oil

3 pound beef or pork roast

1 cup of beef or chicken broth

2 Tablespoons of balsamic vinegar

1 Tablespoon of brown sugar

1 Tablespoon soy sauce

1 Tablespoon Worcestershire sauce

1 clove of garlic, minced

1 large apple, peeled and sliced

1 large onion, sliced

3 sprigs of fresh thyme (optional)

2 Tablespoons of cornstarch

2 Tablespoons of water

1 Tablespoon of butter

Directions

In a measuring cup mix together broth, vinegar, soy sauce, Worcestershire sauce and garlic. Heat olive oil in a large skillet and brown roast on each side. Put roast into slow cooker. Pour broth mixture into the pan and scrape all the brown bits off the bottom. Add apple and onion to pan and stir for a couple of minutes then pour over the roast in the slow cooker. Add thyme sprigs, if using, and cook on low for 5-7 hours. Remove the roast and onions. Let sit for about 15 minutes. Strain the cooking liquid into a pan. Mix the water and cornstarch and then pour into the cooking liquid. Heat and whisk the gravy until thickened. Take off the heat and whisk in butter. Serve with mashed potatoes or polenta and a side of green beans or salad.

This is comfort food at its best!

Crowd Pleasing Chili

Potato Waffles

My kids have been asking me for latkes for the last couple weeks, so I decided to make my version last night, potato waffles. They went very nicely with our leftover slow cooked pork with gravy and acorn squash. Waffles seemed easier so that I wouldn’t have to stand over a pan and could just put the potato mixture in the waffle maker and go about with the other 5 things I was trying to do at the same time.

Potato Waffles

Ingredients

6 to 8 small potatoes (I used a mixture of white and yukon gold potatoes)

2 eggs

1 teaspoon salt

1/8 teaspoon pepper

1 teaspoon onion powder

1/4 teaspoon garlic powder

2 Tablespoons of shredded parmesan

1 Tablespoon GF flour

Directions

Plug in waffle maker and allow it to heat up.  Heat oven to 200 degrees. After you shred potatoes spread them out on towels to dry and wring out all the liquid you can.  In a large bowl mix the potatoes with the remaining ingredients. Scoop about 1/3 of a cup of the mixture for each waffle. Makes about 8 waffles. When the waffle is cooked, place on a baking rack over a sheet pan and place in the 200 degree oven until you are ready to serve. I served it with sour cream and apple sauce.

I had 2 waffle makers going last night. One, my regular 4 square waffle maker and two, the Frozen waffle maker my daughter got for her birthday. So some of our waffles looked like snowflakes 🙂 This is a fun breakfast idea or good way to use up potatoes if you buy too many over the holidays.

Hot and Sour Soup to Warm your Soul

This is one of my favorite soups of all time! It is warm, comforting and absolutely delicious! I could eat this every day, especially now that the weather is cold. I was turned onto hot and sour soup when one of our local take out places brought me a free one. Their ploy worked! I was immediately hooked and had to add it to our order each time. To make it more cost effective I had to figure out how to make it at home. I looked at various recipes online but couldn’t find one that replicated that comforting flavor, so I played with it on my own and this is what I came up with! Enjoy!

Hot and Sour Soup

Ingredients

2 Tablespoons of vegetable oil

¼ teaspoon of sesame oil

About ½ pound of shiitake mushrooms, diced

2 cloves of garlic, minced

¼ teaspoon chili paste (I use Gourmet Garden)

Pinch of white pepper (add more if you want it to be spicy, careful though a little goes a long way)

1/3 cup soy sauce (make sure it is gluten free, if making this GF. I use La Choy Low sodium)

1/3 cup rice vinegar

2 cups beef stock

2 cups chicken stock (or you can use all vegetable stock or all beef or all chicken, it tested best with the mixture )

3 Tablespoons corn starch

3 Tablespoons water

1 egg, beaten

7 ounces (about half of a package) of extra firm tofu, diced

3 green onions, sliced

Directions

In a large soup pot over med-high, heat the vegetable oil and sesame oil. Add the mushrooms, garlic, chili paste, white pepper and stir. Cook for a couple of minutes, until fragrant then add soy and vinegar, stir and allow to simmer for 3 to 4 minutes. Add stock and simmer for another 5 to 6 minutes. In a small bowl combine corn starch and water then pour into the soup and stir. Cook for another couple of minutes and add beaten egg while stirring. Add tofu and green onions. Stir and then serve!

Note: This is a mild version, not very spicy. Add more chili paste and/or white pepper if you want more heat. Careful with the white pepper!

The first time I made this, I made a batch every week. I could not get enough! And I don’t even like mushrooms or tofu 😉 This is a healthy and satisfying meal that is gluten-free and can easily be made vegetarian or even vegan!

It is the perfect snack or meal to have on hand for family arriving for the holidays. I know I would want some after being on an airplane or in a car all day.

Take some time out of your hectic schedule this weekend and make some soup. Eat it in front of the fire. Realistically you might make it at 10 pm, after the kids are asleep, then eat it standing in the kitchen or hopefully in bed binge watching Netflix. Still, you should try. Using the slow cooker to make your dinner is one way to help lessen your stress during this hectic holiday season. As part of my month of posting, I will provide you with an easy slow cooker meal each Wednesday. Bonus, it will be gluten free and no one will ever know 🙂

Slow cookers can not only cook dinner for your family while you are out and about all day, but can cook dinner for a crowd (and keep it warm!) if you are entertaining family or friends. BBQ pulled pork is definitely a popular choice.

BBQ Pulled Pork in the Slow Cooker

Ingredients

2 Tablespoons olive oil

Pork tenderloin roast, about 2 pounds

1 large onion, sliced

2 cloves of garlic, minced

¼ cup apple cider vinegar

1 Tablespoon molasses

1 teaspoon chili powder

½ teaspoon cumin

1 Tablespoon ketchup

¼ cup water

Directions

Sear the pork in a hot pan in olive oil on all sides. Take out and put aside. Add onion and garlic to pan and sauté for a couple of minutes.  Mix the cider vinegar, molasses, chili powder, cumin, ketchup and water. Add the vinegar mixture to the onions and take up all the brown bits on the bottom of the pan with a wooden spoon. Put ½ of the onion in the bottom of the crock pot (heated to high). Place the pork on top and then pour the rest of the onions and vinegar mixture on top of the pork. Cook on high for 3 to 4 hours or on low for 6 to 8 hours.  Shred with a fork and mix some of the sauce in with it and add your favorite bbq sauce and serve as you like.  You can serve with gluten free cornbread, baked potatoes, mashed sweet potatoes (Wegman’s sells and already mashed sweet potatoes that are amazing!) or on these pretzel rolls from Gluten Free on a Shoestring.

Do not be afraid of your slow cooker. It can help you. Even if you put it on at night and cook dinner overnight, put it in the fridge and reheat at dinner time. Cook it all over the weekend and reheat it. Do what you need and what works for you! More easy meals and holiday treats to come…stay tuned!

 

One Pan Roast Chicken with Tomato Sauce

You can never have enough chicken recipes. Chicken is so versatile and often a crowd pleaser. This one pan roast chicken, okay 2 pans, if you count the other one to boil pasta 😉 is easy, delicious and made up of ingredients you probably already have on hand.

Roast Chicken with Tomato Sauce

Ingredients

2 Tablespoons of olive oil

4 chicken thighs

Salt and pepper  (unless chicken was brined, then leave this out)

1 small onion, finely chopped

2 cloves of garlic, minced

½ teaspoon oregano

1-24 ounce can of crushed  tomatoes

1 Tablespoon balsamic vinegar

¾ cup of frozen peas

4 ounces of feta

Directions

In a heavy bottomed large skillet, heat olive oil over medium high heat. If you did not brine the chicken thighs, salt and pepper them. Remove chicken and add onions, garlic and oregano to the skillet and cook for a couple of minutes. Add the can of tomatoes and the vinegar. Stir. Place the chicken back into the skillet and place into the oven for 12 minutes, covered.  Uncover and cook for another 25 minutes. Add peas and cook for another 10-12 minutes.  Serve over your favorite pasta or zoodles and crumble feta on top.

This fed our family of 5 for dinner plus enough was left over for 3 lunches with the pasta. You can easily double this recipe to feed more or freeze for a quick meal another time.

TIP: If you are going to brine the chicken, here is my brine recipe, but you probably only need to make 1/4 of it since this recipe is for a turkey 🙂
