Apricot Glazed Wings

I made these wings for dinner last week (waffles and wings, a spin on chicken and waffles) and I could not wait to share it! I let my kids lick their fingers and I may even have too 😉 Many of you are watching football or basketball games over the next couple of weeks. I like to watch. I don’t really understand football and much to my husband’s dismay, I don’t really want to try to understand it. I’m happy to create yummy treats for those who enjoy watching it. Try these for your next game day party! You will not have leftovers! Just remember, lots and lots of napkins 🙂

Apricot Glazed Wings

Ingredients

About 2 pounds of chicken wings

3 Tablespoons of apricot preserves

1 Tablespoon soy sauce

1 Tablespoon rice vinegar

1 teaspoon garlic, minced

1 teaspoon ginger, minced

1 teaspoon onion powder

Directions

Preheat oven to 375 degrees. Mix all the ingredients, except the wings, together in a large bowl. Microwave for 10 seconds. Whisk the sauce together and pour about ½ of it into another large bowl. Toss wings with ½ of the mixture and place on a cooling rack that is over a baking sheet. Bake for 40 minutes. Toss with the remaining sauce (that was kept in a separate bowl) and serve!

If you like buffalo wings follow the same recipe but melt a little butter into your favorite wing sauce (I discovered Wegman’s Buffalo Hot Sauce this week and it is delicious and gluten free!). Separate the sauce into 2 bowls. Toss the wings in one bowl and place on rack over baking sheet and bake for 40 minutes. Toss with remaining sauce and serve with some ranch dressing or blue cheese (just check that it is gluten-free!)

Put these out on a platter alongside a bowl of Doritos, pot of chili, fruit plate and a veggie platter or some meatballs. Later in the in the week, I’ll have my barbecue ribs recipe for you too! What is your favorite game day snack?

Italian Stuffed Meatballs

A week later and its time to forget about turkey for a little while and switch up your menu! Try these Italian stuffed meatballs and leave your family and friends asking for seconds and thirds! Thanks to my family and friends who tested this for me 🙂

These meatballs would be great for a weekend dinner or even holiday appetizers meal! If you in the mood for Asian flavors, try these Bahn Mi Meatballs.

Italian Stuffed Meatballs

Ingredients

About 3.5 lbs ground beef, chicken or pork (I like to use 2/3 pork and 1/3 chicken thighs or 2/3 beef and 1/3 pork for the best flavor)

3 pieces of bacon, chopped finely (or pulsed in the food processor)

1 1/2 teaspoon salt

¼ teaspoon fresh ground pepper

½ teaspoon onion powder

2 teaspoons oregano

1 teaspoon garlic paste (or 1 clove of garlic, minced)

2 Tablespoons fresh basil, chopped finely

1 egg

1/4 cup of bread crumbs (use gluten-free breadcrumbs if making this gluten free)

6 to 8 oz of mozzarella, cut into ½ inch cubes

2-3 Tablespoons of olive oil

Directions

Pre-heat oven to 375 degrees. In a small bowl mix salt, pepper, onion powder, oregano, garlic, basil, egg and bread crumbs. Place meat and bacon in a large bowl and add the egg mixture. Get your hands dirty and mix it all together.

TIP: Cook a small patty of the meat mixture to taste and adjust seasonings if you need before stuffing and cooking the whole batch.

Roll meatballs. Take a cube of mozzarella and stuff it into the center of the meatball, making sure it is completely encapsulated by the meat mixture.

Heat a large not stick-pan to medium-high, add olive oil. Brown meatballs and transfer to a baking rack that sits on top of a cookie sheet. Bake for about 15 minutes. You can skip the browning step if you like and just add about 5-10 minutes of baking time.

Serve with your favorite tomato sauce and spaghetti, make meatballs subs, serve as an appetizer or freeze for another night when you need an easy meal.

Now, let’s talk ground meat. I grind my own meat using this attachment for my Kitchen Aid mixer. I love it. The meat tastes so much better when freshly ground. You can ask a butcher to do this for you, just make sure if you are keeping gluten free that they are taking necessary precautions to not cross contaminate the meat with marinated meat or spices that contain gluten.

Rethinking my cooking bucket list and looking forward to 2015

Comfort Food and a Cookbook!

As the weather gets colder I really start to crave comfort food. My kids love french fries. Who doesn’t? I’ve been testing recipes and came up with these Baked Shoestring Sweet Potatoes. To cut them I use my OXO mandolin or julienne peeler (see picture below) or you can use a spiralizer and then just cut to desired length of fries.



Baked Shoestring Sweet Potato fries
Ingredients
1 large sweet potato, julienned
2 Tablespoons olive oil
1 teaspoon salt
1/8 teaspoon of pepper
1 teaspoon of onion powder
1/8 teaspoon garlic powder

Directions
Pre-heat oven to 400 degrees. Cut up the sweet potato and soak in water for 15 minutes. Dry between towels for 5 minutes. Toss with olive oil and spices, then spread out on cookie sheet. Cover with foil and cook for 10 minutes. Uncover and cook for 15-25 minutes, depending on your oven and how crispy you want them.


These sweet potato fries pair very well with the grilled pork chop recipe below or even just hot dogs or sausage. Whatever works for your timing or tastes.You can also also substitute chicken for the pork and it will be delicious! Too much food for your family? Cut this recipe in half.

Grilled pork with Peach Sauce
Ingredients
3 pounds of pork chops or chicken breasts/thighs
1 Tablespoon of onion powder
1 teaspoon of ground coriander
1 teaspoon of salt
½ teaspoon of cumin
¼ teaspoon of pepper
¼ teaspoon of paprika
6 Tablespoons peach preserves, I like to use Bon Maman.
3 Tablespoons of apple cider vinegar

Directions

Combine spices in a small bowl with a fork. Rub spice mixture on the meat and let sit about 10-15 minutes, while you prepare the sauce. In another bowl mix the peach preserves (apricot would also be good) and apple cider vinegar.  Grill the pork chops 5 to 7 minutes on each side. Top with the sauce and let rest for 5 minutes. Serve.

I made the cheese puffs from the cookbook for the kids as a snack after school one day and plan on making the crab rangoon today! The two trays of cheese puffs disappeared in about 15 minutes.
